Absolutely Wonderful
 Cranberry Orange Muffins (Or Loaves)

Preheat oven to 350°.

Grease/PAM 24 muffin cups
2 bread pans 8 ½” size

2 ¼ cups Flour

1 tsp Baking Soda

1 tsp Baking Powder

½ tsp Salt

2 cups Sugar

Mix in mixer with heavy blade. Dough is VERY thick



2 Eggs


½ cup Vegetable Oil


½ cup Milk


Very thick, right?






2 cups Fresh Whole Cranberries
       (Watch them. They tend to fly out of the bowl!)

1 cup Raisins

½ or more cups Walnut pieces

~ ½ cup finely chopped Orange peel.
     (Take the entire orange peel and put it in a chopper
      or food grinder. Just out the whole thing into the dough.


Mix all. Spoon into prepared muffin cups, filling ½ half full. They don’t rise much but they need to be able to dry out a bit. Or, spoon into two loaf pans.  Bake in either case until a straw comes out clean.

If muffins, cook ~ 35 minutes

If loaves, cook ~ 65 min, checking after 60.
