Irish Soda Bread

Preheat oven 350

5 min@ 400--that sounds
backwards. You turn oven UP at the end???
- 2 cups flour
- 4 tsp baking soda
- 1 tsp salt
- 3 Tbsp shortening (margarine or Crisco?? Or butter.)
- 2/3 cup milk...seems like this should be buttermilk for
anything to happen but we just made it with milk milk
- 1 Tbsp sugar
- 1/3 cup raisins--be sure they are soft or else soak in hot
water for a few minutes and drain well
- 1/3 cup currents--be sure they are soft or else soak in hot
water for a few minutes and drain well
- 1 tbsp caraway seeds--optional
Mix but don't overmix--that makes it tough. It is dry. Don't
add more water--that makes it tough too.
Flatten into round and bake in iron frying pan.
