Mary's Irish Raisin Cake

("No eggs, no milk)

375 degrees , 50 minutes

  • 2 cups seedless raisins
  • 3   "     water (the infamous cups not inches)
Boil above for 5 minutes and let cool
  • 4 cups flour
  • 3 1/2 tsp baking soda
     
  • 1/2 cup shortening
  • 2 cups white sugar...cream with shortening
     
  • 1 tsp salt
  • 2 tbsp cinnamon
  • 1 tsp cloves
 Stir all together and bake in:
  • greased and floured:  9 x 13 pan. 50 minutes  or
  • Pam'd and floured Bundt pan, 60 minutes
