Coffee Cake


(Yes, this is the one we got from Hildegard Biskey's Cookbook before returning and used to make all the time.)

375 oven 
35 minutes or your oven. Straw inserted in center comes out clean.
Grease 8" square pan.

1/ 1/2 cup flour

1/2 cup shortening (butter's better)

1 cup sugar

Mix together. Remove 3/4 cups of the above for Topping. 

Topping:

Add to the 3/4 cups: 

  • 1 tablespoons MELTED butter

  • 1 teaspoon Cinnamon

Stir together and reserve for topping. (Should be streusel-like lumpy.)

Base:

To remaining mixture at top, add:

  • 2 tsp Baking Powder

  • 1/2 tsp salt

  • 1 egg well beaten

  • 1/2 cup milk

Put base mixture into 8: pan. Spread topping on top. Bake.
