Eggplant Stuff

In general: one eggplant, one egg, one onion. Lots of cheese.

Peal and slice eggplant. Cut into cubes. Peel and slice onion. Cut into slivers.

Boil eggplant and onion in salted water til eggplant is sloppy soft.

Drain. Return to pan or large bowl.

Beat egg(s) in a bowl. Beat this into drained eggplant and onion mix.

Stir in a lot of grated cheese (several flavors make it more interesting--cheddar and Swiss, parmesan and mozzarella, etc.) About a good handful of grated per eggplant.

Put whole thing into greased casserole. Top with bread or corn flake crumbs. Put in over for ~ 1/2 hour at 350 degrees til heated through and solid.

Even better the next day. Good cold too.

Can use the same system with zucchini instead of eggplant.
