Master Recipe for All Fritters

Fritter Batter

            1 cup sifted flour
            2 teaspoon Baking Powder
            1/4 teaspoon salt
            2 tablespoons of granulated sugar (for fruit fritters)
            2 eggs
            1/4 cup milk
            2 teaspoons lemon juice (for fruit?)

Sift together the flour, baking powder and salt (for fruit fritters sift sugar and dry ingredients). Add eggs, well beaten. Then add milk and lemon juice.

Pour through a wire strainer into a bowl (to make sure there are no lumps), and allow to stand for few hours or over night. The batter may be used at once but it is better if allowed to stand.

Dip prepared fruit or vegetables into batter and fry in deep fat (at 375 degrees if you have thermometer) until golden brown. Drain fritters on brown paper, after removing from frying fat. If fruit fritters, sprinkle with powdered sugar.

Preparing Fruit for Fritter

When bananas are used cut in four pieces, down the center and across the middle. When using apples, pare, core and cut into round slices 1/4 inch thick. Soak fruit in sugar and lemon juice (2 tablespoon sugar to 1/2 teaspoon lemon juice). Allow fruit to stand for 1 hour or longer in the sugar mixture. Then drain and dip in fritter batter.

NOTE: We used to just put a can of corn into the batter--forget the fruit--and cooked them up like pancakes.
